Roast Chicken, Steamed Asparagus, Garlic Mashed Potato, and Supreme Sauce

Prior Knowledge

Luckily, I have prior knowledge of all the dishes we will be cooking besides supreme sauce. I have cooked roasted chicken, steamed asparagus, and garlic mashed potatoes, so I am very excited to see how I perform, along with how you think I did. Furthermore, I am excited to cook supreme sauce since I never had before but I do love it. I think learning how to cooking supreme sauce will be a huge advancement in my cooking skills.

Method of Cookery

For this week we will be roasting the chicken, steaming the asparagus, boiling potatoes, and simmering velouté sauce to make supreme sauce.

Learning Objectives

Compare and contrast the different methods of cooking.

Acquire and apply the basic principles and techniques of common dry-heat cooking methods

Name the different mother sauces.

Create a velouté sauce and a derivative of the sauce.

Apply the principles of boiling potato to make a mashed potato

Method of Cooking

Roasted Chicken

In this lab we will be roasting a chicken. The main idea behind roasting is to keep the inside moist and the outside golden brown but this is easier said than done. When roasting it is important that the steam in the oven is regulated with a rack. Steam build up is going to happen but too much isn't good. Roasting is always done with the food at hand uncovered.

Steamed Asparagus

To steam something you start with a pan on medium heat and add water to the pan. But, in order to allow steam to cook the asparagus you must cover the pan up with a lid so that the steam can concentrate. You don't want the pan to be to dry because then you aren't steaming which defeats the whole purpose of steaming food.

Garlic Mashed Potato

It's a right of passage in the South to be able to cook some good mashed potatoes. As a Southern myself, I know it all starts with boiling water. Any good mash potatoes start with boiling. Water boils 212 degrees Fahrenheit.

Supreme Sauce

Making supreme sauce requires simmering, not BOILING. I will start by simmering velouté sauce until it is reduced by 1/4th. Once that is completed I will whisk in cream then return to a simmer.

Origin/History

Roasted Chicken

Roasted chicken began back Medieval Times but of course back then they didn't have oven but used fire. They would rotate the chicken above the flames until it is cooked. It is believed that the origin of roasted chicken is Germany. Nowadays the roasted chicken has evolved tremendously and has become a very common dish.

Steamed Asparagus

The word asparagus comes from a greek word meaning shoot/sprout. It is believed that it originated 2,000 years ago in the eastern mediterranean, where is was prized. When people steaming asparagus is largely unknown.

Garlic Mashed Potato

Potatoes have been a stable food for Europeans for centuries, especially the Irish. It is believed that mash potatoes originated in 1771 by a French man named Antione Parmentier. He created this idea at a completion on different ways to make potatoes.

Supreme Sauce

Supreme sauce is a daughter sauce of the mother sauce velouté sauce. The velouté sauce comes from a French cookbook that is dated in 1651. So the mother sauce has been around a quite a long time. It is believed that supreme sauce was first recorded in a cook book in 1938 from, once again; a French man.

Variations

Roasted Chicken

Roasted chicken, has one similar base which roasting, but after that there are many of variations that are possible. You can online and find all kinds of different recipes for roasted chicken.

Steamed Asparagus

Similar to roasted chicken, variations of steamed asparagus share one common trait which is steaming. Other than that, the cook can go anyway he desires with the asparagus. He can a large array of ingredients to the steam asparagus that will still allow it to be classified as such.

Garlic Mashed Potato

The variations in garlic marsh is very limited because it is such a narrow topic. If it was just marsh potatoes there would be a thousand different ways. But, with garlic marsh potatoes theres only a couple, which vary in the amount of butter, salt/pepper, cream, garlic, potatoes, etc.

Supreme Sauce

The amount of variations for supreme sauce is related to that of it's mother sauce velouté sauce. There are nine variations of velouté sauce so therefore there are nine variations of supreme sauce. But, with supreme sauce can be transformed into other sauces as well.
